【烹饪小贴士】炸豆腐一定要大火,猛油炸,才会外脆内软滑。

    Directions

    Step 1

    将豆腐切块后抹上少许盐和素G粉,放入冰箱冷冻30分钟备用。Marinate tofu with some salt and vegetarian stock granule;and then keep in fridge for 30 minutes.

    Step 2

    烧热2大匙油,爆香姜片,加入其余配料、发菜煮片刻,加入调味料,勾芡上碟备用。Heat 2 tbsp oil in wok,sauté ginger until fragrant,add in all sub-ingredients and Fatt choy,braise briefly,add in seasoning and thicken.

    Step 3

    豆腐炸至金黄色备用。Deep fry tofu until golden brown.

    Step 4

    以大火快炒豆苗,加入少许盐上碟,排上炸豆腐,淋上煮好的配料即成。Stir-fry pea sprouts separately with high heat,season with salt and place on the centre of serving plate,top with fried tofu, pour cooked sub-ingredients over and serve.
